This shout out has been a long time coming, but it goes out heartily to the T. Colin Campbell Center for Nutrition Studies, having had the honor of two articles being featured on their excellent website back in July.
If you want to have a nosy, the first essentially details my journey towards living a plant-based life, and my intentions to get my meat-loving Irish parents on board – a feat, which I’m now happy to say, is in the bag. LDL and (worryingly) high blood pressure numbers are finally down, and Mom and Pop are currently in the throes of kicking it up on their second wind!
One nil to plants there, thank you very much…
The second, which I’m really proud of, is my plant-based version of Traditional Irish Brown Soda Bread. I spent a LOT of time trying to perfect this much-loved family recipe. With its taste being pretty unique as breads go, I knew it would be difficult to truly replicate the flavor.
But I think persistence definitely paid off in this case, and somehow I managed to capture its authenticity. A relief, because it’s one of the few things that was getting hard to live without! If any of you end up giving it a shot, I’d love to hear your feedback.
